Lemons belong to the rue family and are a cross between the bitter orange and the citron. It is believed that the lemon is originated in Asia. Lemons belong to the non-ripening fruits. The colour of the peel does not necessarily say anything about the ripeness of the fruit. In order to achieve the typical yellow colour of the variety, the temperature difference between day and night must be so great that the chlorophyll in the skin decomposes.
